Lucky Charms Chex Mix

Holy sweetness. Guys, this is an awesome snack / dessert to serve at a party. It’s like chex mix meets rice krispie treats meets vanilla cupcakes.

Ingredients:
1 box Lucky Charms cereal
6 cups Rice Chex cereal
2 bags white vanilla baking chips
Sprinkles

Step 1: Pour 1 box of Lucky Charms cereal onto a flat tray and pick out all of the marshmallows. I swear I ate 1/3 of them in the process. May the force be with you to accumulate at least 2 cups of ‘em.

Step 2: In a large bowl, combine the following: 6 cups rice chex cereal; 2 cups Lucky Charms (non-marshmallows); and all the marshmallows you tediously handpicked.

Now, the original recipe tells you to leave out the marshmallows until the end, but I’ve never been one to really read directions, so do as you wish.

Step 3: Heat up two bags of white vanilla baking chips either on top of the stove or in the microwave. Stir as you go and be careful not to burn them.

Step 4: Pour the melted baking chips on top of the ingredients in the large bowl and mix with a spatula.

Step 5: Place the chex mix onto a baking sheet lined with wax paper. Sprinkle with sprinkles.

Step 6: Wait about 20 minutes until the mix cools and hardens. In the meantime, play with your food… :)
